sweet potato stack

Maybe the most delicious meal James and I have had in a very long time... this was born out of strange ingredients all staring me in the face on a weeknight... dinner wasn't planned and I needed to think of something.. I also wanted to go buy buffalo wings somewhere and knew I wasn't about to give in.

I had 1 sweet potato that I baked and softened for about 35 minutes in a 400 degree oven. I had 1 chicken breast that I pan cooked with a little butter, olive oil, Frank's hot sauce and sautéed onions. I tossed in some fresh spinach til it was just wilted. Then I peeled the skin from the cooled sweet potato, diced it, drizzled it with olive oil, salt and pepper and put back in the oven to bake for another 15 minutes. Then broiled it for about 5 on very low broiler til the pieces were a little crisp on the edges. Then I warmed up some black beans, pulled out the homemade hummus * we'd made the night before, smashed up 1 avocado and got out the white cheddar and goat cheese.

*we've slightly updated the hummus recipe.. everything is the same EXCEPT that we only use 1/2 of the garbanzo bean water instead of the whole can's worth. makes for a better consistency we think.

Then I assembled the stack. Sweet potatoes on the bottom. Grated white cheddar on top. Black beans, avocado spread out on top. A bed of hummus, the chicken mixture, crumbled goat's cheese and finished with a little more hot sauce.
