mango avocado salad

If any of you have (begrudgingly) been following my last few, sad posts, you know that I've had some serious issues with this old computer of mine and it makes blog posts a highly time consuming project... like 3 hours time consuming. So, I'm finally booking an appointment with the shop today and DOING something about it. In the meantime, I've done a big update and cleared off as much junk as possible and it's allowed me to upload and edit a few photos with a fair amount of ease so, here goes nothin'.

(keep in mind the next few posts will have very few photos to eliminate cluttered slowness... but we'll be back in full swing shortly)


James and I made a VERY surprising, DELICIOUS dinner last night and the star for me was the salad. When we were in Colorado a few months back, my Aunt Claudette made the simplest, most delectable salad that Jordan and I have tasted in awhile... we were actually really shocked at how great it was because there were maybe five ingredients. Well last night I replicated that salad but added a sixth ingredient that totally MAKES it for me.... mango. So whip it up and give me your thoughts. I have a feeling one of your thoughts might read like this...

"all my summer salad dreams just came true in one bite! and all within 5-7 minutes... i can prep this salad and eat it, too!"
eh? yeah... take a back seat, Panera... your billboard salads ain't got nothin' on my recitherapists'. 
You'll Need:

  • 1 ripe mango
  • 2 ripe avocados
  • 2 cloves garlic, minced
  • juice of 1 lemon
  • drizzle of extra-virgin olive oil
  • sea salt
Get out your salad bowl and rub the inside with the minced garlic. Slice up and dice up the mango and avocado. If you don't know how to easily slice up a mango, here's a quick little video to show you my favorite way of doing it... the lady is cute and her kid is, too so take two minutes to watch it if you need help.


Toss your beautifully diced fruits in the bowl, pour in the lemon juice, drizzle a fair amount of olive oil over it all and sprinkle in sea salt to taste. Mix it all up, making sure to scrape in that nice minced garlic and enjoy!
