brekky burrito

Somedays you've only got two whole wheat tortillas lying around and a few eggs to call your own. And that's a good thing. Eggs and tortillas are the BEST blank canvas for making a killer, easy breakfast or brunch. You can add in anything your heart desires (or whatever you've got left in your fridge) but I'll show you what we had to give you a starting point.

Whip up some scrambled eggs in a skillet with a few black beans. Before they're done and fluffy, toss in a chunk of cream cheese and mix it in with your rubber spatula. That's my dad's specialty that I just can't ignore when I'm making scrambled eggs... I think they're awful without it! While the eggs are cooking, turn your oven on low and pop the tortillas right in on the oven racks.
Slice a lime in half and get out some salsa and other fresh ingredients... (sorry, ours aren't photographed) avocado, cilantro, caramelized onion... Whip up a quick batch of our mean, green monster machine salad/slaw if you don't already have it stocked at all times in your fridge.
Layer the salsa first, then the eggs and beans, and top with whatever fixings you like... fresh lime juice, hot sauce... fold and serve! Also cilantro, avocado and peppers would be AMAZING! (we did cilantro but i didn't photograph...oops!)
