what we bought . . . what we made

What we bought, what we made meal #5: avocado vegemite toast for one. :)
I know, I know this one is ridiculously simple and SO not fancy. But it's delicious! And when you're preoccupied getting your blog world in order and planning out the next month of posts, AND your husband leaves town overnight, you're left wondering why on earth you'd cook a big lunch! And so... vegemite toast.

You'll need:

  • an avocado
  • vegemite (yes, go buy it. i have faith you'll love it and get in touch with your true Aussie self)
  • sourdough toast (i say sourdough because it really helps give a "bite" against the creamy avo)
  • butter
  • balsamic vinegar
  • olive oil
  • cracked black pepper
Toast your sourdough! Butter and vegemite it while it's hot. Scoop out half or less of the avocado. Drizzle it with a little balsamic and olive oil and sprinkle with cracked black pepper. Spread that avocado on top of those butter pools and enjoy! *author's trick: I like to spread only half the toast with the avocado... that way you're having good old fashioned vegemite toast AND avocado toast.*
